Choc Coconut Granola

A deliciously crunchy and chocolatey granola to pair perfectly with your homemade açai bowls, on top of smoothies or enjoyed with coconut yogurt and berries.

Ingredients

  • 2 cups rolled oats

  • 1/2 cup buckwheat groats

  • 1/4 cup coconut flakes

  • 1/4 cup cacao nibs

  • 1/4 cup dried white mulberries

  • 1-2 tbs cacao powder

  • 1 tsp cinnamon

  • 2-4 tbs maple syrup

In a large mixing bowl, combine all the ingredients and pour over the maple syrup. Start with 2 tbs of maple syrup and only add more if necessary. Mix well until the mixture becomes wet and slightly sticky.

Transfer the mixture to a lined baking tray and bake at 200 degrees C for 10 minutes. Be sure to keep watch as the mixture can burn quickly!

Take the mixture out of the oven and allow to cool. Be mindful that when the mixture is out of the oven it will still feel soft and harden once it has cooled down.

Once cool, break the granola into bite-sized pieces and transfer to an airtight container kept in the pantry.

Add the granola to your favourite smoothie bowls or enjoy with yogurt and berries.
