Autumn Roast Vegetables

Hearty autumnal roast vegetables that are quick and easy to make and will keep your tastebuds satisfied and your body nourished throughout the cooler months.

Ingredients

  • 1 bunch carrots

  • 1 bunch broccolini

  • 1/4 pumpkin, sliced with skin on

  • 2-4 cups brussel sprouts

  • 2 zucchini’s, sliced

  • 1 tbs olive oil

  • 2 tsp garlic powder

  • 1 tbs dried oregano

  • Sea salt, to taste

Be sure to wash the veg really well and then toss them all together into a large baking dish. Sprinkle over the garlic powder, salt and oregano and top with olive oil. Mix well.

Cover wth foil and bake at 200 degrees C until the veg is tender (about 20-30 minutes). Remove the foil and bake for another 10 minutes until the veg are crisp.

Eat with your choice or protein and wholegrain. Enjoy!
