Vegan Choc Orange Muffins

My Vegan Choc Orange Muffins are by far my favourite creation to date. The heavenly combination of rich chocolate and orange make these muffins moist, sweet and fluffy. 

Ingredients

  • 1 1/2 cups self-raising wholemeal flour

  • 1 tbs ground flaxseed + 2 tbs water

  • 1/4 cup cacao powder

  • 1/2 cup raw sugar

  • 1 tsp baking powder

  • 3/4 cup plant milk

  • 1/2 cup orange juice

  • 1/4 cup dark chocolate, melted

  • 1 tbs orange zest

For the icing

  • 1 can coconut cream

  • 1/2 cup dark chocolate, melted

  • 1 tbs maple syrup

Preheat the oven to 180 degrees C.

In a small bowl, combine the flaxseed and water and let thicken.

In a large mixing bowl, combine the flour, baking powder, cacao powder and sugar. Pour in the flaxseed meal and orange zest. Slowly pour in the plant milk and orange juice while mixing until a smooth and airy batter forms. Fold in the melted dark chocolate.

Transfer to a lined muffin tray and bake for 40 minutes.

In a small mixing bowl, combine the coconut cream, melted dark chocolate and maple syrup. Whisk until smooth and place in the fridge to firm up.

Once the muffins are cooked, allow to fully cool. Top each muffin with a dollop of the coconut cream icing and decorate with edible flowers, orange zest or shredded chocolate.

Best eaten the day it’s made but can be stored in the fridge in airtight containers for up to a week.
