Spicy Rice Paper Rolls

These spicy rice paper rolls are the best for those times when your body is begging for something fresh. Ever since I made this recipe I’ve been making them almost every single day. They’re packed full of gut-nourishing nutrition and are sure to keep you satisfied.

Ingredients

  • 1 package firm tofu

  • 3 tbs sriracha

  • 3 tbs soy sauce

  • Rice paper sheets

  • 1 carrot, julienned

  • 1 cucumber, julienned

  • Handful butter lettuce

  • 1/2 cup kimchi

  • 1 bunch fresh coriander

  • A few sprigs of spring onion

Method

To a bowl, mix the sriracha and soy sauce. Cut the tofu into sliced and coat in the sriracha marinade. Lay of a lined baking sheet and bake the tofu at 220 degrees C until browned. Remove from oven and let cool.

Prep all the ingredients and lay them out in front of you. Prepare the rice paper sheets according to package instruction. Spread the ingredients in the centre of the rice paper and roll. 

Serve with a generous amount of sweet chilli dip and enjoy!
