Portuguese Spiced Tofu

A plant-based alternative to Portuguese chicken. This fool-proof recipe is quick, simple and super tasty.

Ingredients

  • 1 block firm tofu

  • Juice of 1 lemon

  • 1-3 tsp olive oil

  • 2 tsp dried oregano

  • 1 tsp garlic powder

  • 1 tsp sweet paprika

  • 1/2-1 tsp chilli flakes

  • Salt, to taste

  • Bamboo skewers

Fill a shallow dish with water and place the bamboo skewers in there to soak for 30 minutes. This prevents them from burning in the oven.

To help the tofu absorb the marinade, drain out its water by pressing it under a heavy chopping board of a heavy book. Chop into bite-sized pieces.

In a bowl, mix in all the spices and pour over the lemon juice and olive oil. Coat the tofu in the mixture and slide each piece through the skewers. Bake at 220 degrees C for 20 minutes or until crisp.
